This is a meal plan for Collingwood attendees.  This is not an event registration for camp.

*This is a gluten free & nut free menu.

**Please select either meat or vegetarian option on the registration form.

*** You are responsible for your own breakfast every day. 

*** We will be doing the Sunday, May 19 dinner and awards at Copper Blues Restaurant in Blue Mountain Village at 6:30pm

*** Participation in the meal plan is OPTIONAL.

Dinner May 17, 2019

Grilled chicken breasts (with chimichurri sauce on the side) OR Greek stuffed peppers. Quinoa. Olives. Feta (Vegetarian)

  • Grilled vegetable platter (peppers, red onion, asparagus, zucchini). Balsamic.
  • Sweet potato wedges. Sea salt.
  • Baby greens. Quinoa. Pomegranate arils. Citrus dressing.

Lunch May 18, 2019

Lean Beef Chili OR Chickpea and Quinoa Chili (Vegetarian)

  • Kale Salad. Heirloom Carrots. Sweet Potatoes. Lemon Honey Vinaigrette
  • Corn Biscuits

Dinner May 18, 2019

Taco Dinner - Pulled Chicken OR Roasted Cauliflower

  • Grilled vegetables. Pickled onion. Tomatoes. Corn. Black beans. Shredded Cabbage Cilantro.
  • Yogurt crema. Guacamole. Red sauce. Green sauce. Jalapeno.

“Make Your Own Bowl”

Grilled Salmon OR Seared Tofu

  • Diced Avocado. Sweet Potato. Hard Boiled Egg. Edamame
  • Quinoa. Lentils. Spinach
  • Mixed Green Salad. Seasonal Vegetables. Plum balsamic.
